Vada Pav
Main Ingredients
- For the Vada:
- 350 grams potatoes (about 2 medium to large-sized potatoes)
- 7 garlic cloves (small to medium-sized)
- 2 green chillies
- ½ teaspoon mustard seeds
- A pinch of asafoetida (hing)
- 8 curry leaves
- 2 tablespoons chopped coriander leaves
- Salt (as required)
- Oil (for deep frying)
- Dry red chutney (optional)
- For the Pav:
- 8 pav (dinner rolls)
- For the Green Chutney:
- 1 ½ cups coriander leaves
- 2 hot green chillies
- 2 small garlic cloves
- 2 teaspoons lemon juice
- Water (as required)
- Salt (to taste)
Directions
- Prepare the Vada:
- Boil, peel, and mash the potatoes.
- In a pan, heat oil, add mustard seeds, asafoetida, curry leaves, green chillies, and garlic. Sauté.
- Add turmeric powder, mashed potatoes, chopped coriander leaves, and salt. Mix well.
- Shape the mixture into balls and deep fry until golden brown.
- Make the Green Chutney:
- Blend coriander leaves, green chillies, garlic, lemon juice, and water to a smooth paste. Add salt as needed.
- Assemble the Vada Pav:
- Slit the pav and spread green chutney on both sides.
- Place a Vada in the center, sprinkle dry red chutney (if using), and close the pav.
- Serve immediately with fried green chillies.
