Mango with yoghurt and almond praline

Main Ingredients

For the almond praline:

  • 1/2 cup granulated sugar
  • 1/2 cup sliced almonds

 

For the dessert:

  • 2 ripe mangoes, peeled and diced (or sliced)
  • 1 cup Greek yogurt (or plain yogurt)
  • Honey or maple syrup, to taste (optional)

Directions

  • Make the almond praline:

    • Line a baking sheet with parchment paper or a silicone mat.
    • In a dry skillet or saucepan, heat the granulated sugar over medium heat. Swirl the pan occasionally to ensure even melting.
    • Once the sugar starts to melt and turn golden brown, add the sliced almonds. Stir constantly to coat the almonds with the caramelized sugar.
    • Continue cooking until the almonds are evenly coated and the sugar is a deep amber color.
    • Quickly pour the almond mixture onto the prepared baking sheet, spreading it out into an even layer with a spatula. Let it cool and harden completely.
    • Once cooled, break the praline into small pieces or chop into chunks. Set aside.
  • Prepare the mango and yogurt:

    • Peel and dice (or slice) the ripe mangoes.
    • In a bowl, mix the Greek yogurt (or plain yogurt) with honey or maple syrup to taste, if desired.
  • Assemble the dessert:

    • Divide the diced mango between serving bowls or glasses.
    • Spoon a dollop of the sweetened yogurt over the mangoes in each bowl.
  • Serve:

    • Sprinkle the almond praline pieces over the top of each serving.
    • Serve immediately and enjoy the refreshing combination of sweet mango, creamy yogurt, and crunchy almond praline!
