Flourless Chocolate Cake

Main Ingredients

  • 1 cup unsalted butter
  • 8 ounces dark chocolate (at least 70% cocoa solids), chopped
  • 1 1/4 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 large eggs, room temperature
  • Cocoa powder or powdered sugar for dusting (optional)

Directions

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

  • Melt butter and chocolate:

    • In a medium saucepan, melt the butter and chopped dark chocolate over low heat, stirring frequently until smooth and well combined. Remove from heat and let cool slightly.
  • Prepare the batter:

    • Stir in the granulated sugar, salt, and vanilla extract into the chocolate mixture until well incorporated.
    • Add the eggs one at a time, mixing well after each addition until the batter is smooth and glossy.
  • Bake the cake:

    • Pour the batter into the prepared springform pan and smooth the top with a spatula.
