Chow Mein

Main Ingredients

  • 200g chow mein noodles (fresh or dried)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 carrot, julienned
  • 1 bell pepper (any color), thinly sliced
  • 1 cup cabbage, thinly sliced
  • 1 cup bean sprouts
  • 150g chicken breast or beef, thinly sliced (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Chopped green onions (scallions), for garnish

Directions

  1. Prepare the Noodles:

    • If using dried chow mein noodles, cook them according to package instructions until al dente. Drain and set aside. If using fresh noodles, blanch them briefly in boiling water, then drain and set aside.
  2. Prepare the Sauce:

    • In a small bowl, mix together soy sauce, oyster sauce (if using), sugar, salt, and pepper. Set aside.
  3. Stir-Fry:

    • Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.
    • Add sliced onion and stir-fry for 1-2 minutes until softened.
  4. Add Protein (Optional):

    • Push the onions to the side of the skillet and add thinly sliced chicken breast or beef (if using). Stir-fry until cooked through, about 3-4 minutes.
  5. Add Vegetables:

    • Add julienned carrots, sliced bell pepper, and thinly sliced cabbage to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  6. Combine Noodles and Sauce:

    • Add the cooked chow mein noodles and bean sprouts to the skillet. Pour the prepared sauce over the noodles and vegetables.
  7. Stir-Fry Together:

    • Toss everything together using tongs or chopsticks, ensuring the noodles are well coated with the sauce and heated through. Adjust seasoning with salt and pepper if needed.
  8. Serve:

    • Transfer the chow mein to serving plates. Garnish with chopped green onions (scallions) and serve hot.
