Apple Cookies
Main Ingredients
- 2 medium-sized apples (any variety you prefer)
- 1 cup old-fashioned rolled oats
- 1/2 cup creamy peanut butter (or any nut or seed butter of your choice)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1/4 teaspoon ground cinnamon
- 1/4 cup chopped nuts (such as walnuts, pecans, or almonds) – optional
- 1/4 cup dried fruits (such as raisins, cranberries, or chopped apricots) – optional
- 1/4 cup mini chocolate chips or shredded coconut – optional, for added sweetness
Directions
Prepare the Apples:
- Wash the apples thoroughly and pat them dry.
- Core the apples and cut them into thin slices, about 1/4-inch thick.
Make the Cookie Mixture:
- In a large mixing bowl, combine the oats, peanut butter, honey or maple syrup, and ground cinnamon. Mix well until all ingredients are evenly incorporated.
Assemble the Apple Cookies:
- Take an apple slice and spread a thin layer of the oat mixture on top.
- If desired, sprinkle with chopped nuts, dried fruits, mini chocolate chips, or shredded coconut.
Serve or Chill:
- Repeat with the remaining apple slices and oat mixture until all are used up.
- Serve immediately, or for best results, chill the apple cookies in the refrigerator for about 30 minutes to allow them to set.
